When we scraped back the natron mixture and uncovered our tomatoes we observed changes to its size, weight, colour, smell and texture. We discovered that mummification preserves the tomato by stopping bacteria, which need wet conditions to survive. The natron absorbed the water from the tomato making it lighter, dried up and wrinkly.
